Turmeric Chicken with Tzatziki Sauce

So this meal we were not that deep in the woods so I was able to bring a few cooking items  I would not normally be able to carry (grill insert).  Which was very convenient as I was cooking for a bigger group and there were very little rocks in the area.  I was also able to secure a cinder block and piece of a center block to hold the grate up.  I did happen to forget my cooking fork, so I ended up having to use my pocket knife to do the flipping.

Ingredients

  • 4 medium chicken breast
  • 2 sweet onions
  • 1 pack of 2 naan bread
  • 1 tablespoon tumeric spice
  • garlic to taste
  • salt to taste
  • pepper to taste
  • tablespoon of oil
  • lettuce

Tzatziki Sauce

  • 1 large cucumber
  • 1 cup sour cream
  • tablespoon lemon juice
  • garlic, salt, pepper, cayenne pepper to taste

Directions

Cut the chicken breast down bite sized sandwich pieces.  I use Ziploc bags to marinate in.  put the chicken straight into the bag: add the tumeric, garlic, pepper, and oil.  Save the salt until right before cooking (salt pulls moisture and will pull the water from the chicken and make a wet mess in your bag).  Give the bag a good jostle to best disperse the seasonings as evenly as possible.

Tzatziki Sauce

The cucumber needs to be pealed, deseeded, and minced finely.  This can be accomplished with a knife and some elbow grease, but a food processor is much easier.  Once the cucumber is to the proper consistency it needs to be drained.   A towel works best, but a proper paper towel can work in a pinch.  It does not have to be bone dry just dry enough so that your sauce is not excessively runny.  Combine minced cucumber, lemon juice, garlic, pepper, salt, and cayenne pepper and stir together until fully mixed.

Julienne the onions and season to taste

Grill the chicken, onions, and naan bread.  Tear off a piece of warmed naan, add a few pieces of chicken, a few onions, leaf of lettuce, and dollop of of the tzatziki sauce and you are ready to go!
